Mixed Vegetable & Coconut Stir Fry is a very and simple recipe, made with mixed vegetables cooked in a rich, aromatic spices and coconut.

You might find this recipe similar to Kerala style thoran recipes such as cabbage thorancarrot thoran, etc..I have used frozen mixed vegetable for this recipe, you could use any mixed vegetable combination or fresh vegetables for this recipe.

Mixed Vegetable & Coconut Stir Fry with step by step photos..

1.Heat up oil, crackle mustard seeds

2.Add dry red chilli and cumin seeds

3.Add chopped onion, cook for a minute

4.Add ginger and garlic paste , cook for a minute.

5.Now add mixed vegetables (I have used frozen here), cook for 2-3 minutes.

6.Add chilly flakes or chopped green chilli

7.Now add ground coconut and spice mix.

8.Cook over a medium flame for 3-4 minutes and serve.

Ingredients

  • Vegetable oil – 1 Tbsp
  • Mustard seeds – 1 tsp
  • Cumin seeds – 1/2 Tsp
  • Dry red chilly – 2 each
  • Red onion – 1 medium, chopped
  • Ginger- garlic paste – 1 Tsp
  • Mixed vegetable, frozen- 750 gms
  • Grated coconut – 1 cup
  • Turmeric powder – 1 Tsp
  • Chilly powder – 2 Tsp
  • Crushed chilly – 1 Tsp
  • Salt to taste

Directions

  1. First of all, take grated coconut, turmeric and chilly powder in blender.
  2. Blend to a fine paste, set aside.
  3. Heat up oil in a pot.
  4. Add mustard seeds.
  5. let it splutter, add cumin seeds and dry chilly.
  6. Keep the flame low and stir fry for a minute.
  7. To this, add chopped onion and cook for 2 minutes.
  8. Now add ginger and garlic paste, cook for 2 minutes.
  9. Add mixed vegetables and mix well.
  10. Add crushed chilly and cook for a minute.
  11. Add grated coconut paste.
  12. Mix well, cover with a lid and cook 5 minutes.
  13. Remove the cover and increase the flame to medium high.
  14. Cook for another 2-3 minutes or until dry.
  15. Adjust the seasoning and serve hot.
