Kerala Style Chicken & Potato Stew is a superb curry made with chicken and potatoes simmered in coconut milk and spices. This is one of my favorite curries from Kerala, which is quite famous during Easter and the Kerala Style Chicken & Potato Stew and Appam combination is absolutely magnificent.

1.Heat up coconut oi, add curry leaves, dry chillies

3.add cashew nuts

4.add onion and cook until soft

5.add ginger-garlic paste and cook for a minute

6.add chicken cubes

7.chopped tomatoes, cook for a minutes

9.diced potatoes

10.salt

11.light coconut milk or coconut cream

12.bring to boil

13.reduce flame to simmer, cover and cook until chicken is done.

14. two tbsp coconut cream or coconut milk

15.chopped coriander leaves and 1 tsp crushed black pepper.

16.slow simmer for 2-3 minutes and your Kerala Style Chicken & Potato Stew is ready.

Ingredients

  • Coconut oil – 2 Tbsp
  • Curry leaves – 1 sprig
  • Dried chilly red  – 2 each
  • Red chilly – 4 slit
  • Cashew nuts – 2 Tbsp
  • Red onions – 2 chopped
  • Ginger and garlic paste – 1 Tsp
  • Chicken breast – 800 gms, cubes
  • Tomatoes -2 chopped
  • Potatoes – 1 cup, diced
  • Coconut milk or coconut cream- 1 cup (thin)
  • Salt to taste
  • Coriander leaves – 1 Tbsp, chopped
  • Black pepper – 1 Tsp, crushed

Directions

  1. Heat up a pot, add coconut oil.
  2. Add curry leaves, fry for 30 seconds
  3. Add dried red chilly, fry 30 seconds.
  4. Now add red chilly (or green chilly), slit and cook for a minute.
  5. Add chopped onions and cook until soft.
  6. Then add ginger and garlic paste, cook for minute.
  7. Add chicken cubes and cook over a medium heat.
  8. Stir fry  chicken for about 2-3 minutes.
  9. Now add chopped tomatoes, diced potatoes.
  10. Add think coconut milk (if you are using homemade coconut milk)
  11. If you are using store bought coconut milk, add little bit of water too.
  12. Bring it a boil, reduce the flame to simmer.
  13. Add salt, mix well.
  14. Cover the pot with a lid and cook until the chicken is done.
  15. When the chicken is done, add 2 Tbsp coconut cream.
  16. Add chopped coriander, crushed black peppercorns and simmer for 3-4 minutes.
  17. Now your chicken stew is ready, serve with Appam.
  18. Enjoy.
