Garam Masala Powder

Garam Masala Powder Recipe.

Garam masala and Indian cuisine is inseparable. One of most predominant,aromatic  and widely used spices in Indian subcontinent. Garam Masala Powder is made from a combination of whole spices. The spice combination varies from region to region in India itself. As far my personal view goes, everyone makes their personal versions of it and uses it in different curries and masalas and so on.. I really cant conclude on the fact that which combination of spices  is the best or where it is best used .

The word garam masala literally translates to hot spice, in Hindi garam means “hot” (spicy) and masala means “powdered spices”.  Most of Indian recipes do call for garam masala. Garam masala is readily available in the super market. There are so many brands are available too. But the ingredients used by different brands may vary or the combination or the content ration may vary.

I always recommend the home made version of it. The process of making or mastering your own perfect garam masla combination can be time consuming. But, it’s definitely worth it. To get the best result, the whole spices are dry roasted first and then ground in food processor to fine fine powder.

In the olden days, our grand mothers used to sun dry the spices and then make powder out of it by using a Pestle & Moratr.  Yup, who has got time in the world to go through the grueling process now. Especially when the similar results can be achieved with the help of modern gadgets such as food processors.

 Different Garam Masala Powder Recipe.

I have compiled some of the famous and widely used garama masala recipes in Indian subcontinent.

  1. Super Garam masala made from black pepper corns, cloves, mace, bay leaf, cinnamon stick, cumin and corinader.
  2. Garam masala made from cinnamon stick, cloves, mace, nutmeg, bay leaf, black cardamom and cumin seeds.
  3. Simple Garam masala made from cinnamon,cardamom, cumin and black pepper corns

The recipe below is my own version of garam masala and I have used the same for many non-vegetarian and vegetarian dishes and worked really well for me in terms of getting the taste and flavor profile right.

Garam Masala Powder Recipe..


  • Bay leaves – 3 each
  • Cinnamon stick – 2 each
  • Cloves – 1 Tbsp
  • Cumin seeds -1 Tbsp
  • Coriander -1/2 Tbsp
  • Star anise -2 each
  • Black pepper-1 Tbsp
  • Mace – 3 each
  • Black cardamom – 5 each


  1. Measure and set ingredients ready.
  2. Heat up  a skillet, slow is preferable.
  3. Add the whole spices.
  4. Dry roast the whole spices until the aroma is apparent.
  5. Take the roasted spices in a food processor and grind.
  6. When ground to fine powder, transfer into a dry and air tight container.

Note: Grind the spices when it is still hot (leave the spices outside for a minute to cool down a bit before powdering).

Dry roast the whole spices in a skillet over medium heat..
