Do you like eggplants 🍆 ? No is your answer ! Really, I never used like it either, but I have recently started to appreciate the REAL eggplant flavour and have learned how to play around with different spice combination to get the best out of it.

My favourite eggplant recipe  is Brinjal Dry Fry, but I have made multiple variations of it recently and I will post the spicy version of the recipe very soon here in this space, so stay tuned for the same.

Curried Eggplant & Quinoa Recipe..


  • Eggplant – 1 medium sized, small dices
  • Vegetable oil -1 Tbsp
  • whole black peppercorns
  • Onion -1 chopped
  • Ginger – 1 Tsp, chopped
  • Garlic -1/2 Tsp, chopped
  • Turmeric powder – 1 Tsp
  • Chilly powder -1 Tsp
  • Salt to taste
  • Quinoa -300 gms, cooked
  • Coriander leaves -2 Tbsp, chopped
  • Freshly ground black peppercorns


  1. Wash and dice the eggplant ( I keep the skin on), set aside.
  2. Heat oil in a skillet, fry onion, whole black pepper corn, ginger and garlic.
  3. Saute for a couple of minutes or until onion becomes translucent.
  4. Sprinkle the powder spices,  salt and cook for a minute.
  5. Add diced eggplant and cook on slow fire.
  6. Add 1/4 cup of water if needed and continue to cooked until the eggplant is cooked through.
  7. Now add chopped coriander leaves and freshly ground black pepper corns.
  8. Add in cooked quinoa and cook for another 2 minutes.
  9.  Dish out and Enjoy.
