carrots and coconut stir fry

I did always love carrots and I have been growing carrots for some time. Whenever I cook carrots, I always made it sure to not to over cook it. The reason being, I love eating carrots raw. This recipe  is my take on those lovely carrots I grew at my home.



  • Carrots- 500 gms, grated
  • Oil- Tbsp
  • Mustard seeds- 1Tsp
  • Dry chilly- 2nos
  • Curry leaves- 1 sprig
  • Onion – 1 medium,chopped
  • Grated coconut – 100 gms
  • Garlic – 3 cloves
  • Cumin seeds – 1/2 Tsp
  • Chilly powder – 1 Tsp
  • Turmeric powder – 1 Tsp
  • Salt to taste


  1. Grate carrots, set aside.
  2. Heat oil in a skillet, splutter mustard seeds.
  3. Add curry leaves dry chilly, cumin seeds  and sauté.
  4. Add onion and cook until translucent
  5. Add turmeric and chilly powder and cook well.
  6. Add carrots and season, mix well.
  7. Cover with lid and cook on a slow fire.
  8. Meanwhile in a food processor, crush together grated coconut, garlic, cumin seeds, green chilly and chilly powder.
  9. Add the grated coconut mixture to the carrots and continue to cook for 5 more minutes.
  10. Adjust the seasoning.
  11. Now you have your carrots and coconut stir-fry ready.
