1.Chicken Korma

One of the most popular Indian dishes, known for it’s creamy, aromatic and flavorful taste. There are mainly two variations of Korma, one of South-Indian Kurma and other is North-Indian Korma. Towards Southern part of India Kurma (or Korma)  is mainly made of vegetables. Here is the  South Indian Style Vegetable Korma Recipe.

  • Chicken breast -1kg, diced
  • Ghee or clarified butter – 2 Tbsp
  • Onion – 3, sliced
  • Cardamom -1 Tsp, crushed and skin off
  • Cloves -1/4 Tsp
  • Almond – 1 cup, soaked
  • Cashew nuts -1/2 cup
  • Ginger – 1/2 Tsp, paste
  • Garlic -1/2 Tsp, paste
  • Turmeric -1 Tsp
  • Red Chilly powder -1 Tsp
  • Coriander powder – 1/4 Tsp
  • Garam masala -1/2 Tsp
  • Cream -1/2 Cup
  • Salt to taste


  1. Marinate the diced chicken with ginger paste, garlic paste, coriander powder, chilly powder and turmeric powder.
  2. Let the marinated chicken sit in the refrigerator for at least 30 minutes (over night is preferred).
  3. Heat up ghee or clarified butter in thick bottomed vessel and add crushed cardamom and cloves. Cook for 2 minutes.
  4. Add sliced onions, salt and saute onions until light golden brown in colour.
  5. Add almonds,  cashew nuts and one cup of water and bring to a boil.
  6. Turn down the fire and let it simmer until the mixture is cooked through (it should approximately 15-20 minutes).
  7. Turn off the heat and let it cool down a bit.
  8. Take the  mixture in a food processor and blend it to smooth and fine consistency.
  9. Return the mixture back to the vessel and add marinated chicken.
  10. Cook the chicken until soft on a simmering fire.
  11. When the chicken is  soft and tender, add cream and garam masala.
  12. Adjust the seasoning and serve hot.

2.Palak Paneer


  • Paneer – 400 gms
  • Vegetable oil – 1 Tbsp
  • Onion -1 medium, diced
  • Spinach – 400 gms
  • Green chilly – 2 slit
  • Cloves -1/4 Tsp
  • Cardamom- 1/4 Tsp
  • Cumin seeds -1/2 Tsp
  • Ginger-garlic paste -1 Tsp
  • Tomatoes – 1 medium, finely chopped
  • Turmeric- 1/4 Tsp
  • Red Chilly powder -1/2 Tsp
  • Garam masala -1 Tsp
  • Kasoori methi -1 Tsp, dry roasted
  • Cream -1/2 Cup
  • Salt to taste


  1. Pick the stems of spinach leaves, wash and strain.
  2. Heat 1/2 Tbsp of oil (reserve 1/2 tablespoon) in a vessel, add onion and saute until soft.
  3. Add spinach leaves and green chilly, cook for 2 minutes.
  4. Do not over cook them as they turn black and does not taste great as well.
  5. Cool it down and blend to smooth and fine puree.
  6. Heat up 1/2 Tbsp of oil and fry cloves, cardamom and cumin seeds.
  7. Add in finely chopped tomatoes and powdered spices.
  8. Cook them on a slow fire until the flavor becomes apparent.
  9. Now add the spinach paste and bring to simmer.
  10. Add the diced panner (cottage cheese) and cream.
  11. Cook for another 5 minutes on low heat.
  12. Sprinkle garam masala and adjust the seasoning.
  13. Serve hot with rice or bread.

  • Chicken breast – 750 gms, cubes
  • Vegetable oil -1 Tbsp
  • Turmeric powder -1 Tsp
  • Chilly powder – 1 Tsp
  • Coriander powder -1/2 Tsp
  • Cumin powder -1 Tsp
  • Ginger paste- 1 Tsp
  • Garlic paste -1 Tsp
  • Curry leaves- 1 sprig
  • Red dry chilly -2
  • Onion -2 medium, chopped
  • Star anise -1
  • Cinnamon stick -1
  • Tomato – 2 chopped
  • Salt to taste


  1. Marinate the chicken cubes with turmeric powder, chilly powder, cumin powder, chilly powder, garlic paste and ginger paste.
  2. Let the chicken sit in the marinade for overnight.
  3. Heat oil in a vessel and add marinated chicken.
  4. Sear the chicken on all sides and remove (cook for 3 minutes) and set aside.
  5. In the same oil, fry off cumin seeds first.
  6. Then add curry leaves and dry red chilly .
  7. Let it fry off on a slow fire and infuse the flavor.
  8. Add chopped onion and cook until soft (for 2 minutes)
  9. Now add ginger paste , garlic paste and salt
  10. Cook until onions are light golden brown in color.
  11. Now add the powdered spice and cook for 2 minutes.
  12. Keep the flame low while cooking the powdered spices and add some water if needed.
  13. Add chopped tomatoes and cook on a slow flame.
  14. Cook the tomatoes until the oil begins to leave the sides of the skillet.
  15.  Now add the seared chicken pieces and cook until done.
  16. Adjust the seasoning and enjoy your chicken madras with  boiled rice.
