Baingan Chicken / Eggplant & Chicken may not be one of the most famous chicken dishes from India, but I love this. I tell you what, I like any dish with eggplant in it. Especially when it is cooked with tempered cumin seeds.

Baingan Chicken / Eggplant & Chicken Recipe With Step By Step Photos..

1.Heat up oil, fry cumin seeds first and saute onion for 2 minutes..

2. Add chillies..

3.Add ginger-garlic paste

4. Add tomatoes and cook for 3-4 minutes..

5.Add coriander powder, chilly powder and turmeric powder. Cook for 2 minutes..

6.Add chicken and stir fry on high heat for 2 minutes..

7.Add eggplant and water. Cook until done..

8.Add chopped coriander..

9.Cook until desired consistency is achieved..

Ingredients

  • Chicken – 5oo gms, cubed
  • Vegetable oil- 1 Tbsp
  • Cumin seeds – 1 Tsp
  • Onion- 2 medium, chopped
  • Ginger-garlic paste – 1 Tsp
  • Green chilly or red chilly- 1 chopped
  • Tomato – 2 medium, chopped
  • Turmeric – 1 Tsp
  • Chilly powder – 1 Tbsp
  • Coriander powder – 1 Tbsp
  • Coriander leaves – 1 Tbsp, chopped

Directions

  1. Heat up large skillet, add vegetable oil.
  2. Add cumin seeds and fry them for a minute.
  3. Add chopped onions and cook until soft.
  4. Add salt, ginger-garlic paste and cook for another 2 minutes.
  5. Keep the flame low, add chopped green chillies or red chillies.
  6. Cook for a minute, add tomatoes.
  7. Cook until mushy and then add powdered spices.
  8. Stir fry until the raw flavor goes off.
  9. Now add chicken, increase the flame to high.
  10. Stir fry for 2 minutes.
  11. Add eggplants, water (hot water preferably) and let it come to a boil.
  12. Reduce the flame and let it cook on a simmering flame until done.
  13. Add chopped coriander and adjust the seasoning.
  14. Cook until the desired consistency is achieved.
