Vegetable Pulao

Basmati rice is cooked together with vegetables and a mix of whole and powdered masalas.

Vegetable pulao is one of the most famous rice preparation in India, originally from Northern part of India. There are so many combinations and variations are available all across India.

Ingredients

  • Basmati rice – 250 gms (1 cup)
  • Hot water – 500 ml(2 cups)
  • Ghee or butter – 1 Tbsp
  • Star anise – 2 each
  • Cloves – 5 each
  • Cinnamon stick – 1
  • Black peppercorns – 1 Tsp
  • Cardamom – 1/2 Tsp
  • Onion – 1 medium, sliced
  • Carrots- 1, diced
  • Green beans/French beans – 50 gms, diced
  • Green peas – 50 gms
  • Turmeric powder – 1 Tsp
  • Garam masala – 1 Tbsp
  • Cashew nuts – 1 Tbsp
  • Raisins – 1 Tsp
  • Coriander or cilantro leaves- 1 Tbsp chopped
  • Pine apple – diced, for garnish
  • Salt to taste

Directions

  1. Wash basmati rice 3 to 4 times under running water, soak for 15 minutes and drain
  2. Heat ghee in a thick bottomed cooking vessel, add cinnamon, cloves,cardamom, black peppercorns and star anise
  3. Let the flavor get infused into the oil and remove the whole spices.
  4. Add cashew nuts and raisins and cook for a minute
  5. Add onion firstĀ  and cook for a minute
  6. Add green peas, carrots and green beans and cook for approximately 3 minutes.
  7. Add basmati rice and cook on a medium high heat for a minute.
  8. Add powdered spices and salt.
  9. Add hot water and bring to boil.
  10. Reduce the flame and let it come to simmer.
  11. Cover with lid and let cook for approximately 10-15 minutes.
  12. Remove from the fire, let it cool down at room temperature for while.
  13. Add pineapple and mix slowly using the back side of spoon.
  14. Serve together with raita, pickle and pappadam.
