One of the most favored vegetarian dishes in India.Vegetable Dum Biriyani is made from cooking basmati rice and vegetables in Indian spices separately,  layer them alternatively and then steamed in air tight vessel over a charcoal fire.

Vegetable biriyani is rich in flavors, healthy and it’s a wholesome meal by itself. There are many regional varieties of  vegetable biriyani is available across the sub-continent. Even though vegetable Dum Biriyani is a vegetarians delight, it’s liked by vegetarians and non-vegetarians.

Many of you may think, the process of making a dum biriyani takes a lot of time and effort. But, that is not the case. If you plan well and follow the steps, the cooking dum biriyani is quite enjoyable and the end product is going to  be awesome as well.

Vegetable Dum Biriyani

Vegetable Dum Biriyani is made in three different steps. First step is to cook the rice with whole spices. The second step involves, cooking vegetables in a oniontomato based gravy. Last step is to layer rice and vegetable curry alternatively and then steamed in dum method.

Biriyani is traditionally eaten with raita, pickle and pappad (pappadam). Raita will help to mellow down the spiciness of biriyani and at the same time cleanse your palate as well.

Vegetable Dum Biriyani Recipe..

Ingredients

  • Basmati rice – 300 gms
  •  Butter- 3 Tbsp
  • Cardamom– 3 each
  • Cloves- 4 each
  • Cinnamon Stick- 1
  • Bay leaf- 2 each
  • Mace strands- 1 each
  • water- 600 ml
  • Onion– 2 medium sized, sliced
  • Green Chilli- 2 each
  • Chopped ginger– 1 Tsp
  • Garlic chopped-1 Tsp
  • Turmeric powder-1/2 Tsp
  • Chilli powder-1/2 Tsp
  • Cumin powder-1/2 Tsp
  • Coriander powder-1/2 Tsp
  • Carrot- 200 gms
  • Long beans- 2oo gms
  • Green Peas – 200 gms
  • Mint leaves – 1 Tbsp, chopped
  • Coriander leaves -1 Tbsp, chopped

Directions

  1. Wash rice in cold running water for 3-4 times and soak it for 30 minutes.
  2. Drain and keep aside.
  3. In a clean cooking utensil,heat butter and add whole spice-cinnamon,cardamom and cloves,cook until you get strong flavour.
  4. Add rice now and stir fry until the rice becomes crisp.
  5. Add water to the rice (water should be boiled and kept by the side) and add salt.
  6. Bring it a boil stirring  the rice continuously (Caution-rice should not break while stirring).Turn the fire to the lower side.
  7. Cover with a lid,cook the rice to 3/4th doneness.Remove from fire and keep aside.
  8. Using a fork or back side of spoon,make the rice flaky before it becomes cold.
  9. To Make the vegetable curry- heat butter in clean Medium sized utensil,add cinnamon,cardamom and clove,and cook for a minute.
  10. Add onion,cook until it becomes translucent,add ginger,garlic and green chilli to it.Continue to cook until the onion turns slightly golden brown  in color.
  11. Add powdered  masalas now-chilli,turmeric,cumin and coriander.Cook for about 3 minutes.
  12. Now add all the vegetable and cook for about 3 minutes.Add enough water and bring it boil.
  13. Turn the heat to a lower side and continue to cook for about 15 minutes.Check the vegetable for doneness,check the seasoning.Finish it with chopped coriander leaves.
  14. Now you can layer the rice and vegetable curry alternatively .Take a medium sized utensil and start layering the rice and veg.curry alternatives(3-4 layers).
  15. Spooning out some extra gravy on top will give you a better taste.
  16. Cover with a air tight lid and steam for 10 minutes.
