Vegan Quinoa Lettuce Wraps

Very easy to make this dish and it’s fun to fill the baby cos lettuce cups. I have asked my kids to join me and help me dish out and make the cups, they have enjoyed every bit of it. Once you have the quinoa cooked and cooled down, all you need to is mix quinoa with chopped onion, tomato, capsicum, lemon juice, salt, freshly ground black pepper and coriander leaves, and your mixture is ready.

Vegan Quinoa Lettuce Wraps Recipe

Ingredients

  • Quinoa – 300 gms
  • Extra virgin olive oil – 1 Tbsp
  • water -600 ml
  • Baby cos lettuce
  • Red onion– 2 , small dices
  • Tomato – 2 small dices
  • Capsicum red – 1 small dices
  • Capsicum green – 1 small dices
  • Green chilly -2 finely chopped (optional)
  • Lime juice – 2  Tsp
  • Salt to taste
  • Freshly ground black pepper
  • Coriander leaves chopped

Directions

  1. Take quinoa and water in thick bottomed medium sized sauce pan.
  2. Let it come to boil, reduce to simmer, cover with a lid and cook until soft.
  3. Meanwhile, chop the vegetables and wash the lettuce leaves.
  4. When quinoa is ready, remove from fire and let it cool down.
  5. Once cooled down, combine quinoa, vegetables, lemon juice, olive, coriander leaves and seasoning in a bowl and toss gently to mix in all the ingredients.
  6. Arrange the lettuce , carefully fill each leaves with the mixture.

Note: I have added some finely chopped green chillies for extra kick, if you like extra spiciness.
