Ingredients

Directions

  1. Soak vanpayar over night.
  2. Cook the vanpayar adding enough water, salt, one pinch turmeric and one clove garlic.
  3. In the mean time, heat coconut oil in a skillet, fry curry leaves and dry chilly.
  4. Add shallots, green chilly and stir fry on low heat.
  5. Crush together, grated coconut, turmeric, cumin seeds and chilly powder in a food processor and set aside.
  6. When vanpayar is soft (should take about 15-20 minutes to cook), strain and add transfer it to the skillet.
  7. Saute for a minute and crushed coconut and spice mix.
  8.  Give it a good mix, sprinkle 2 Tbsp water, cover with a lid and cook for another 3-4 minutes.
  9. Remove the cover, adjust the seasoning.
  10. Stir fry on a medium high heat until dry.
  11. Serve hot with rice.

Note: Need to soak the vanpayar or red chori beans over night as this will save the cooking time and will help to cook the beans soft and tender.
