I have made tomatillo salsa couple of days and I have been keeping it and using it little by little every day. Since I had the Tomatillo Salsa ready to use in my refrigerator, all I had to do was to mix some quinoa with the salsa. Then I have added a tiny bit seasoning and lime juice to give a little bit of kick- and the salad  was rocking..

Tomatillo Salsa & Quinoa Recipe

Ingredients

  • Quinoa -500 gms, cooked
  • Tomatillo – 1/2 cup, chopped
  • Cherry tomatoes-1/2 cup, chopped
  • Capsicum -1/2 cup, chopped
  • Onion -1 medium, chopped
  • Lime juice -2 Tbsp
  • Extra virgin olive oil -2 Tbsp
  • Salt to taste
  • Freshly ground black pepper corns
  • Coriander –  2 Tbsp, chopped

Directions

  1. To make the salsa- wash and chop all the veggies and set aside.
  2. In a bowl, combine the veggies, olive oil,seasoning, chopped coriander and lime juice.
  3. Mix well to combine and refrigerate for 2 hours.
  4. You should at least let the salsa sit for 2 hours before using for the best result.
  5. In a bowl mix the quinoa and salsa to combine all the ingredients.
  6. Adjust the seasoning.
  7. Transfer into serving dishes.
  8. Enjoy
