Boneless chicken thigh meat is marinated with yogurt, powdered spices, lemon juice and pan roasted over a medium heat to perfection. You don’t really have to have a tandoori oven at home and yet you can produce the same flavour by pan roasting. You don’t believe me! Tandoori Chicken & Quinoa Salad Recipe..

Ingredients

  • Chicken thigh- 400 gms, boneless
  • Yogurt -1/2 cup
  • Turmeric powder -1 Tsp
  • Chilly powder -1 Tsp
  • Garam masala -1 Tsp
  • Lemon juice -1 Tbsp
  • Salt to taste
  • Freshly ground black pepper to taste
  • Quinoa -300 gms, cooked
  • Cherry tomato -1/2 cup, halved
  • Onion – 1 medium, sliced
  • Coriander leaves – 1 Tbsp, chopped
  • Lemon juice -1 Tbsp for dressing
  • Ghee for roasting

Directions

  1. Marinate the chicken thigh meat with yogurt, turmeric powder, chilly powder, salt, Garam Masala, freshly ground black pepper and let sit for 2 hours.
  2. Heat up skillet / grill over medium fire and melt ghee.
  3. Place the chicken thigh on the hot grill and cook over a medium heat.
  4. Keep flipping the chicken every 2 minutes until cooked and golden brown in colour.
  5. Make sure to keep the flame on medium as this will help the chicken evenly and induce the real tandoori style roasting flavour.
  6. Once thicken is soft and juicy, remove from the fire and let it cool down.
  7. Slice the cooked chicken prior to mixing with quinoa.
  8. Gently toss quinoa, chicken, sliced onion, cherry tomato, seasoning, lemon juice and chopped coriander in a bowl.
  9. Dish out and serve.
