It has been a while since I have posted a thoran recipe. As you all know, my love for thoran is so much so that  I often make it at home. Sword Beans Thoran/ Valari Payar Thoran is something I have never tried before. But, I knew  even before trying that it was going to taste good. Hey,  I am talking about thoran and how could a thoran be tasteless.

Sword beans or Valari payar is not as common as other beans in the market place. But, still some of super markets do manage to get them often. Sword Beans Thoran/ Valari Payar Thoran is made from stir frying sword beans in a spicy coconut and powdered spice mix.

Sword Beans Thoran/ Valari Payar Thoran Recipe..

Ingredients

  • Sword Beans – 500 gms, chopped
  • Coconut oil – 2 Tbsp
  • Shallots – 5  each, sliced
  • Green chilly -2 each, slit
  • Grated coconut – 1 cup
  • Turmeric powder – 1/2 Tsp
  • Chilly powder -1/4 Tsp
  • Cumin seeds – 1/2 Tsp
  • Garlic cloves – 2 each
  • Curry leaves -1 sprig
  • Mustard seeds -1/2 Tsp
  • Curry leaves – 1/2
  • Salt to taste

Directions

  1. Wash and chop the sword beans and set aside.
  2. Heat oil in medium high heat.
  3. Slide in shallots and saute for a minute.
  4. Add chopped sword beans and continue to stir fry on medium heat for 5 minutes.
  5. In the mean time, grind together grated coconut, turmeric powder, cumin seeds, garlic cloves and chilly powder.
  6. Just crush it the food processor and remove.
  7. Mix in the coconut mix and salt into the sword beans.
  8. Sprinkle 2-3 tbsp. of water, cover with a lid and cook until the beans is tender.
  9. To make a tempering, heat 1 Tbsp of coconut oil, crackle mustard seeds first.
  10. Then add curry leaves and dried chilly to it.
  11. Remove the tempering from the fire and mix in cooked beans.
  12. Give a good mixing and adjust the seasoning.
  13. Serve with boiled rice.
