The most delicious 🤤 and healthy breakfast pudding I have had in a while-Sweet Potato Yoghurt Quinoa Breakfast Pudding is absolutely amazing with the divine not so sweet sweet potatoes 🍠, quinoa, yogurt and sultanas.

Sweet Potato Yoghurt Quinoa Breakfast Pudding is made with quinoa, yogurt, sweet potatoes and berries. I have layered the ingredients in multiple layers to make eye appealing- well, as the saying goes ‘you eat with your eyes first’ right?

How healthy is sweet potatoes? Without a doubt I can tell you that sweet potatoes are healthy and it’s advised that you should include them in your diet as often as possible. They are rich in fibre and good source of Vitamin C.

Sweet Potato Yoghurt Quinoa Breakfast Pudding Recipe..

Ingredients

  • Quinoa – 300 gms, cooked
  • Sweet potatoes – 400 gms
  • Greek yogurt- 1 cup
  • Raspberries – 1/2 cup
  • Strawberries -1/2 cup
  • Blueberries – 1/2 cup
  • Sulatana -1 cup
  • Honey -1 Tbsp

Directions

  1. Peel the sweet potatoes and dice.
  2. Take sweet and water in a pot and bring to boil.
  3. Once boiling, reduce the flame to simmer and cook until soft.
  4. Strain the sweet potatoes and purée it.
  5. Let it cool down.
  6. Then mix quinoa and sweet potatoes together.
  7. In serving glass or bowl, layer Greek yogurt and quinoa-sweet potato mix.
  8. Add berries and sultanas in between the layers, reserve some for garnish.
  9. Garnish with berries and sulatanas and serve.
  10. Enjoy your Sweet Potato Yoghurt Quinoa Breakfast Pudding.
