Sweet Potato & Quinoa Power Bowl is a high protein based, plant based and delicious breakfast bowl to kick start your week. A very simple and easy to make breakfast dish, made with sweet potatoes 🍠, quinoa and nuts.

One power bowl can keep you going for a long time..I just loved this combination and I did not find it  as a heavy breakfast dish and for sure you will like this recipe..

For this recipe I have used the smashed sweet potatoes which I have made ready the previous day and the cooked quinoa (which I always have ready in my refrigerator). I have mixed quinoa, sweet potatoes , a quarter cup of almond milk 🥛 , honey and let it sit for 10 minutes.

Are the sweet potatoes are really sweet? How sweet are they? Well, I personally don’t find the sweet potatoes are really really sweet, but it’s sweet enough. I did not like sweet potatoes for a long time, but I recently started appreciating the flavour, taste, etc and I am experimenting sweet potatoes with different combinations now…

Sweet Potato & Quinoa Power Bowl recipe

Ingredients

  • Quinoa -400 gms
  • Sweet potatoes-400 gms, cooked and smashed
  • Almond milk -1/4 cup
  • Honey -2 Tbsp
  • Almond -2 Tbsp, sliced
  • Pistachio -2 Tbsp, chopped

Directions

  1. Warm up the almond milk in a sauce pan.
  2. Stir in honey and it cool down.
  3. In bowl, mix cooked quinoa, smashed sweet potatoes, nuts (reserve some for garnish) and almond milk.
  4. Transfer into serving dishes and garnish with almonds and pistachio.
  5. Enjoy your breakfast.

Note: You can adjust the quantity of honey as per your taste.
