How about a healthy and tasty salad for lunch? Sounds great right! Sprouted Mung Bean Salad is a complete meal by itself. Sprouted mung beans or green gram, kidney beans, diced onion and tomato, lemon juice, seasoning, coriander and mint leaves are mixed together to make this healthy and tasty salad.

This nutrient rich Sprouted Mung Bean Salad is very easy to make at home. All you need it sprouted mung beans and cooked rajma or kidney beans. Mung beans can be store bought. But, I would always recommend you to make it at home as it is very easy to make. To make make the mung bean sprouts, soak mung beans over night and strain them the next day. Then in flat container, line the bottom with a clean napkin or cloth, then sprinkle one layer of soaked mung beans and spray or sprinkle water. Keep it in a warm place, preferably close to a window.You should water the mung beans at least 3 times a day. The next day you should see the sprouts starting to come out.

I have used 3 days old sprouts for this salad. You can continue to grow them for a couple days more if you wish to. Do try out this Sprouted Mung Bean Salad Recipe and do let me know your feedback in the comments below.

Sprouted Mung Bean Salad Recipe

Ingredients

  • Mung bean sprouts – 300 gms
  • Rajma or Kidney beans -200 gms
  • Onion – 1 medium, chopped
  • Tomato – 1 medium, chopped
  • Green chilly – 1 each, chopped(optional)
  • Lemon juice – 1 Tbsp
  • Salt to taste
  • Freshly ground black pepper corns
  • Mint leaves – 1 Tsp , chopped
  • Coriander leaves – 1 Tsp, chopped

Directions

  1. Soak kidney beans over night and cook until done.
  2. Strain and cool down.
  3. Wash the mung bean sprouts, keep aside.
  4. Chop the onion and tomato and keep aside.
  5. In a clean bowl, take all the ingredients and toss well.
  6. Adjust the seasoning and serve.

Note: I have added green chilly to this salad recipe ( I wanted it to be spicy !) , you can skip chilly if you don’t want it to be spicy.
