I have tried so many variations of tomato and potato rice, but this one has a special place in my list. Basmati rice, tomatoes and potatoes are cooked in  a flavorful combination of spices as curry leaves, asafoetida, black pepper corns, coriander seeds and cumin seeds.

1.heat up a pot, add ghee and fry cumin seeds and curry leaves.

2.Add coriander seeds, black pepper corns, onion and tomato. Cook for 2 minutes.

3. Add potatoes. Mix well. Then add trumeric, asafoetida and chilly powder. Cook for a minute.

4.Add basmati rice, fry over a low heat for 2 minutes.

5.Add hot water, salt and bring toil. Cover with a lid and cook until done.

Ingredients

  • Ghee- 1 Tbsp
  • Cumin seeds – 3/4 Tsp
  • Curry leaves – 1 sprig
  • Coriander seeds -1/2 Tsp
  • Black pepper corns – 1/2 Tsp
  • Onion – 1/2 cup, sliced
  • Tomatoes – 1/2 sliced
  • Potatoes – 1/2 diced
  • Green chillies – 2 chopped
  • Asafoetida (hing) – 1/2 Tsp
  • Turmeric – 1 Tsp
  • Chilly powder – 1 Tsp
  • Basmati rice -3/4 cup
  • Water- double quantity of rice by volume
  • Salt to taste
  • Coriander leaves -1 Tbsp chopped

Directions

  1. Heat up a pot, add ghee.
  2. Fry cumin seeds and curry leaves.
  3. Add black pepper corns and coriander seeds.
  4. Cook for a minute, add sliced onions.
  5. Add tomatoes, cook for 2 minutes.
  6. Add chopped green chillies, cook for a minutes.
  7. Add diced potatoes and mix well.
  8. Now add asafoetida, turmeric and chilly powder.
  9. Cook over a slow flame for a minute.
  10. Then add basmati rice amd stir fry 2 minutes.
  11. When the rice is crispy, add hot water.
  12. Make sure to measure the water(double quantity of rice by volume).
  13. Bring to a boil, add salt.
  14. Reduce the flame, cover the pot with a lid.
  15. Let it cook over a slow simmer for 16-18 minutes.
  16. When the rice done, add chopped coriander leaves.
  17. Gently mix and serve hot.
