Spicy Quinoa & Vegetable Pulao

Spicy Quinoa & Vegetable Pulao is an Indian version of quinoa recipes made with quinoa, vegetables, Indian powdered and whole spices and coriander leaves. I have made this dish this after and enjoyed it with plain yogurt- it was an absolute heavenly lunch.

Spicy Quinoa & Vegetable Pulao

I just could not hide the Indian in me while I was planning my lunch meal yesterday and decided to make a spicy Indian style Spicy Quinoa & Vegetable Pulao . I have used vegetables such as cauliflower, potatoes and green beans and carrots.

Ingredients

  • Quinoa – 300 gms
  • Vegetable oil – 1 Tbsp
  • Black pepper corns- 1/2 Tsp
  • Fennel seeds -1/4 Tsp
  • Cloves -1/2 Tsp
  • Red onion – 1 medium sized, sliced
  • Gingergarlic paste – 1/2 Tsp
  • Cauliflower -1 cup, florets
  • Green beans -1 cup (1 inch length cut)
  • Potatoes – 2 medium, sliced
  • Carrots – 1 medium sized, sliced
  • Water – 600 ml
  • Green chilli- 2 each
  • Turmeric – 1/4 Tsp
  • Garam Masala -1/2 Tsp
  • Salt to taste
  • Coriander leaves- 1 Tbsp

Directions

  1. Cut the vegetables first and set them aside.
  2. Heat up oil in a sauce pan, fry the whole spices such as black pepper corns, fennel seeds and cloves.
  3. Add sliced onion, saute for a minute.
  4. Add gingergarlic paste, green chilly and salt and cook for a minute.
  5. Now add all the vegetables and continue to saute.
  6. Sprinkle the powdered spices and let it cook.
  7. Pour the quinoa and hot water.
  8. When it comes to boil, reduce the flame to simmer.
  9. Keep covered and let it cook for 20 minute.
  10. Remove from the fire and add chopped coriander leaves and mix well.
  11. Serve hot.
