Ever since I have got into habit of eating well ( or eating right) , I have always been in the look out for different flavour combinations to try out with quinoa and Spiced Pumpkin & Quinoa Bowl is one of those recipes I have tried and liked it to the most. Spiced Pumpkin & Quinoa Bowl

I have cooked the quinoa and spiced quinoa seperately and mixed it together with a tiny bit of chaat masala and freshly chopped coriander leaves. Like me, you can also have the quinoa cooked before hand and store it in the refrigerator and use it whenever you need it.

I have cooked the pumpkin with Indian spices ( I made it spicy though) and smashed it using the back of the wooden spoon before mixing it with the quinoa.

Spiced Pumpkin & Quinoa Bowl Recipe..

Ingredients

  • Quinoa – 300 gms, cooked
  • Pumpkin – 500 gms
  • Olive oil – 1 Tbsp
  • Onion – 2 medium, sliced
  • Cumin seeds – 1 Tsp
  • Green chilly – 2 , chopped
  • Tumeric powder – 1/2 Tsp
  • Chilly powder – 1/2 Tsp
  • Garam masala – 1 Tsp
  • Chaat masala – 1 Tsp
  • Coriander leaves – 1 Tbsp, chopped
  • Salt to taste

Directions

  1. Peel the skin off the pumpkin and dice them.
  2. In a medium sized sauce pan, heat oil and fry cumin seeds.
  3. Add sliced onion and sauté till light golden brown in colour.
  4. Add in diced pumpkin and continue to for 2 minutes.
  5. Now sprinkle powdered spices such as tumeric, chilly and garam masala and cook till the raw flavour goes away.
  6. Cover with a lid and cook until soft.
  7. Remove from the fire and smash it using the back side of the spoon.
  8. Mix in the cooked quinoa, chaat masala and fresh coriander leaves into the cooked pumpkin.
  9. Serve hot.
