South Indian Style Quinoa & Potato Soup with step by step pictures..

Ingredients

  • Quinoa – 300 gms
  • Potato – 300 gms, diced
  • Water – 3 cups
  • Coconut oil – 1 Tsp
  • Curry leaves – 1 sprig
  • Dry red chilly – 2 each
  • Red onion – 1 medium , chopped
  • Ginger – 1/2 Tsp, chopped
  • Garlic – 1/2 , chopped
  • Turmeric powder – 1/2 Tsp
  • Chilly powder – 1/2 Tsp
  • Cumin powder – 1/2 Tsp
  • Salt to taste
  • Freshly ground black pepper

Directions

  1. Soak quinoa for 15 minutes, drain and let it dry.
  2. Heat up oil in a medium sized pot, add curry leaves.
  3. Then add dry red chilly and let it infuse the flavor.
  4. Add in onion, garlic and ginger, saute for 2 minutes.
  5. Sprinkle powdered spices such as turmeric, chilly and cumin powder and cook for 1 minute.
  6. Now add, quinoa and water and let it come to a boil.
  7. Reduce the flame, add potatoes and  let it cook on a simmering flame.
  8. This should take about 18- 20 minutes.
  9. Adjust the seasoning.

Note: I have used coconut oil to get the Indian feel to the soup, if you don’t like the flavor  of coconut oil or if you can get it , you can substitute.
