Smokey Beef & Root Vegetables Stew Recipe..

Ingredients

  • Beef – 500 gms, cubes
  • Olive oil – 1 Tbsp
  • Onion – 1 medium, chopped
  • Garlic -2 cloves, sliced
  • Smoked paprika -1 Tsp
  • Bay leaves – 2 each
  • Thyme – 2 sprigs
  • Black pepper corns -1/2 Tsp
  • Tomato paste -1 Tsp
  • Red wine- 1/4 cup
  • Beef stock- 1 cup
  • Carrot – 2 , diced
  • Turnips -2 diced
  • leeks – 1 stem, diced
  • Salt to taste
  • Freshly ground black pepper corns to taste

Directions

  1. Trim the fat and cut the beef into cubes and set aside.
  2. Cut the root vegetables and set aside.
  3. Heat a sauce over a medium high heat.
  4. Add olive oil, add the beef.
  5. Brown the beef well over medium high heat.
  6. Remove the beef and set aside.
  7. In the same pan, add onion, bay leaves, pepper corns and garlic and saute (add oil if needed).
  8. Once the onions are translucent, add smoked paprika and cook for a minute.
  9. Now add tomato paste and cook.
  10. When the flavor becomes apparent, add wine and cook for a minute.
  11. Return the beef to the pan and add stock.
  12. Bring to a boil and season.
  13. Cover with a lid and simmer for 25 minutes.
  14. Remove the cover and add the root vegetables (except leek).
  15. Cook on slow fire with out the lid.
  16. When the meat and vegetables are tender, add leeks.
  17. Cook for another 2-3 minutes.
  18. Adjust the seasoning and serve hot.

Note: For a juicy and tender stew, beef needs to be cooked on a slow fire for long time as it needs time to break down. So never rush the process. Add the root vegetables half the way through cooking and delicate vegetables or leafy vegetables towards the end. To get a rich and flavorful stew you need brown the meat on all sides, this helps to enhance the flavor.
