Flavoured Yogurt Quinoa & Berries

Its been a while since I have used saffron in any of recipes and I have almost forgotten fact that I had a packet of saffron in my pantry. I am not a big fan of saffron but could I avoid saffron completely, last week I have made Kesari Shrinkand and today I have decided to try out Saffron Flavoured Yogurt Quinoa & Berries. Saffron is a good source of anti-oxidant, known for cancer fighting properties, helps in loosing weight, improves mood, etc.

Saffron Flavoured Yogurt Quinoa & Berries Recipe

Ingredients

  • Quinoa – 200 gms, cooked
  • Yogurt – 1 cup
  • Saffron – few strands
  • Warm milk -1 Tsp
  • Strawberry – 1/2 cup, cut
  • Blueberry -1/2 cup
  • Sugar – 2 Tbsp, powdered
  • Almonds -chopped

Directions

  1. Heat up the milk and dissolve saffron strands and let it sit and infuse the flavour for while
  2. In a bowl mix together yogurt, quinoa, sugar, chopped almonds (save some for garnish)and saffron milk.
  3. Be mindful of the quantity of sugar you add, I have added 2 Tbsp only, you may vary the quantity as per liking, optionally you can add honey as well.
  4. Spoon out the mixture into serving glasses and top with berries and almonds.
  5. Now your Saffron Flavoured Yogurt Quinoa & Berries is ready. Enjoy.
