Rice Kheer

Rice Kheer  or Ari Payasam is a very famous  Indian dessert made with rice, milk , sugar, nuts and cardamom. Rice is slow cooked in the milk, then sweetened with sugar and then finished with cashew nuts and cardamom powder.

What I find most interesting about Rice kheer is that, it is a quick and easy to make dessert and it doest n’t rquire much of cooking skills and it suits all almost occasions be it a birthday, anniversary day or even for any festival season. And, all of a sudden you have an unexpected guest walked in..don’t panic! Rice kheer could be the first choice.

It can be served Hot or Cold..

Rice Kheer Recipe..

Ingredients

  • 300 ml Milk
  • 200 gms Basmati rice/ white rice
  • 300ml Coconut milk
  • 150 gm Sugar
  • 5 pcs Green cardamom
  • 25 gms Almond
  • 25 gms Cashew
  • 25 gms Raisins

Directions

  1. Wash rice and soak it for about 30 minutes. Drain and keep aside.
  2. Heat milk in a thick bottomed container and let it come to a boil.
  3. Reduce fire and let it simmer for 5 minute and add rice to the simmering milk. Stir the rice occasionally to avoid sticking it to the bottom.
  4. When rice is cooked, add sugar and continue to cook until thickened to the required consistency.
  5. Remove from the fire and stir in cardamom powder, cashew and almonds and let it rest for 5 minutes.
  6. Transfer it to serving bowl and serve
