Quinoa Salad With Asparagus & Green Beans is made with quinoa, asparagus, green beans, cherry tomatoes, spinach and garlic flavoured lemon dressing. A very simple and an easy to make recipe which requires no elaborate cooking procedures.

I have used cooked quinoa for this recipe ( if you would like to learn how to cook perfect quinoa every time, click here),  asparagus and green beans are cooked separately in salted boiling water. Making the dressing is very as well, the mild garlicky flavoured lemon dressing did really go well with the salad.

Quinoa Salad With Asparagus & Green Beans Recipe..

Ingredients

  • Quinoa -250 gms
  • Asparagus – 1 bunch, tough ends cut off
  • Green beans – 1oo gms, cleaned
  • Cherry tomatoes – 1/2 cut, halves
  • Spinach – 2 cups
  • Onion -1 sliced
  • Garlic -2 cloves, chopped
  • Olive Oil -2 Tbsp
  • Lemon juice – 2 Tbsp
  • Salt to taste
  • Freshly ground black pepper to taste

Directions

  1. Blanch asparagus and green beans in salted boiling water.
  2. Drain and let it cool down.
  3. To Make the dressing, take chopped garlic, lemon juice in a bowl and whisk in the olive oil.
  4. Season the dressing with salt and freshly ground black pepper.
  5. In a bowl combine quinoa, asparagus, green beans, spinach,cherry tomatoes and drizzle the dressing.
  6. Gently toss together to combine and serve.
  7. Enjoy your salad.
