Quinoa & Roasted Butternut Squash Salad is a healthy, easy, hearty salad made with quinoa, roasted butternut squash, onion, raisins tossed with lemon pepper dressing.

I have used lemon pepper  dressing for this recipe, which has made all the difference in the flavor profile of the salad. I have tried different dressing combinations and no other dressing has really been as enjoyable as lemon-pepper has been. Lemon pepper dressing is very easy to make and it is one of those dressings which will be handy when you are short of time.

Quinoa & Roasted Butternut Squash Salad Recipe..

Ingredients

  • Quinoa – 300 gms
  • Butternut squash – 500 gms, diced
  • Water – 600 ml
  • Red onion – 1 medium, diced
  • Tomato – 1, diced
  • Lemon pepper powder- 1 Tbsp
  • Olive oil – 2 Tbsp
  • Lime juice -1 Tbsp
  • Salt to taste
  • Coriander leaves -1 Tbsp, chopped

Directions

  1. Take quinoa and water in a medium sized pot and bring to boil.
  2. Reduce fire to simmer, add salt.
  3. Keep covered and cook until all the water is being absorbed.
  4. Peel and dice the butternut squash, apply olive, salt and black pepper.
  5. Roast the butternut squash in the preheated oven at 180 celcious for 10 minutes.
  6. In the mean time,  make the dressing.
  7. To make the dressing, take lemon-pepper powder, lime juice and mix in the olive oil using a whisk.
  8. When the quinoa is soft, remove from the fire and cool down.
  9.  To make the salad, take quinoa, roasted butternut squash, chopped coriander leaves and lemon-pepper dressing and gently toss in a clean bowl.
  10. Your salad is ready.
