There is nothing like a salad with fresh fruits on a hot summer day. Especially when combine you quinoa with apricot, apricot and quinoa go hand in hand, the sweetness of apricot, the strong flavor of cardamom and the crunchiness of cashew nuts make a perfect combination . Apricot is one of the healthiest fruits that everyone should include in their meal.Apricot has got a wide range of nutrients present in it, rich Vitamin A,C and K, rich in minerals and also a good source of anti-oxidants.

Quinoa & Roasted Apricot Summer Salad Recipe..

Ingredients

  • Quinoa – 300 gms
  • Apricot – 4 each, sliced
  • Cardamom– 3 each, crushed
  • Cashew nuts- 2 Tbsp, chopped
  • Chicken stock – 2 cups
  • Butter/Olive oil -1 Tsp
  • Salt to taste

Directions

  1. Heat up olive oil in medium sized sauce pan, then add the quinoa and roast it until you get a nutty flavor.
  2. Add chicken stock and bring to a boil.
  3. Add in crushed cardamom and reduce the flame to simmer.
  4. Keep covered and cook until soft.
  5. Mean while, heat up olive oil or butter in a non-stick pan and arrange sliced apricots.
  6. Pan roast both sides until nice golden brown in color.
  7. Remove the quinoa and let it cool down.
  8. In bowl, take quiona, salt, cashew nut and mix well.
  9. Dish out quinoa in a bowl and arrange roasted apricot on top, sprinkle some chopped cashew nuts on top and serve.
