Looking for aan easy and comforting quinoa  lunch bowl recipe, I have got perfect Quinoa Curry Bowl Recipe for you. Made with quinoa, Indian spices, vegetables and avocado.

I have cooked the quinoa and vegetables in one pot and let the flavours infuse into quinoa. To finish, I have topped up the some diced avocado to give a contrast in flavour and it also helped mellow down the spices.

  • Quinoa – 250 gms
  • Water – 500 ml
  • Olive oil – 1 Tbsp
  • Whole black pepper corns- 1/2 Tsp
  • Cumin seeds -1/4 Tsp
  • Ginger 1/2 Tsp, chopped
  • Gralic -1/2 Tsp, chopped
  • Onion – 1 medium, chopped
  • Carrot – 1, diced
  • Cauliflower – 1/2 cup, florets
  • Green peas – 1/2 cup
  • Garam masala -1 Tsp
  • Chilly powder -1/4 Tsp
  • Avocado – 1 diced
  • Coriander leaves – 1 Tbsp, chopped


  1. Heat up olive oil in medium sized pot, add in onion.
  2. When onions are soft, add ginger and garlic and cook for a minute.
  3. Add the vegetables and quinoa, stir- fry for a couple of minutes.
  4. Stir in the powdered spices such as garam masala , chilly powder and cook  on a slow heat for about 2-3 minutes.
  5. Now add hot water (preferably hot water), salt and bring to boil.
  6. Reduce fire to simmer and cook with tight fitting lid.
  7. Stir occasionally to prevent it from sticking to the bottom.
  8. Cook for about 17- 18 minutes.
  9. When quinoa is soft, remove from the fire and mix in chopped coriander leaves.
  10. Dish out and top the quinoa with diced avocado. Enjoy.
