Quinoa, Cucumber & Avocado Salad

This super healthy Quinoa, Cucumber & Avocado Salad is made from cooked quinoa is mixed together with cucumber, onion, avocado , capsicum and simple lemon juice- olive oil dressing. I often get asked, how do you make quinoa tasty?Well, One of the best ways to make it taste nice is to use chicken stock (or any stock of your choice) instead of water. In this recipe I have used chicken stock for cooking and it tasted really nice.

I know it’s not possible to have chicken stock handy always, but one of the alternatives is to use chicken stock powder. But I don’t really recommend the use of chicken stock powder or the store-bought chicken stock itself. Make your own chicken stock at home and can be refrigerated and used for a week. Soon I will post an easy chicken stock recipe.

Quinoa, Cucumber & Avocado Salad

Ingredients

  • Quinoa – 250 gms
  • Olive oil – 1 Tsp
  • Chicken stock – 2 cups
  • Salt to taste
  • Cucumber – 1 deseeded and diced
  • Avocado – 1 diced
  • Capsicum – 1 diced
  • Red onion – 1 diced
  • Freshly ground black pepper
  • Lemon juice – 1 Tbsp
  • Olive oil – 3 Tbsp, for making the dressing

Directions

  1. In a medium sized pot, heat up olive oil first.
  2. Add the quinoa and stir fry for a minute.
  3. Add chicken stock and let it come to boil.
  4. Then reduce the flame and let it cook on a slow simmer.
  5. When cooked remove from the fire, let it come to room temperature and cool down in the refrigerator.
  6. While the quinoa is being cooled down, cut the vegetable.
  7. To make the lemon-olive oil dressing, take lemon juice, oil, salt and black pepper in a bowl.
  8. Whisk together to combine all ingredients.
  9. To make make the salad, combine quinoa, cut vegetables and dressing together and toss.
  10. Serve and enjoy.
