Quinoa Avocado Tomato Power Bowl is a healthy, easy to make, delicious recipe made with quinoa, tomato, avocado, cucumber, carrot and honey-lime dressing. This is one of my favorite quinoa recipes, which requires very minimum cooking and a handful of ingredients.

All the ingredients used in this recipe are the most common ingredients in every kitchen. Cooking quinoa is a no-brainer. Once you have the cooked quinoa and  veggies  ready, assemble them in a serving dish and drizzle the honey-lemon dressing on top and serve.

Quinoa Avocado Tomato Power Bowl Recipe

Ingredients

  • Quinoa -250 gsm
  • Tomato – 2 medium, sliced
  • Cucumber – 1 sliced
  • Carrot- 2 sliced
  • Avocado- 2 diced
  • Cauliflower -1/4 of cauliflower, blanched
  • Salt to taste
  • Freshly ground black pepper
  • Honey-2 Tbsp
  • Lime juice- 2 Tbsp
  • Olive oil – 2 Tbsp

Directions

  1. Place quinoa and water in pot and bring to boil.
  2. Once boiled, reduce to simmer, keep covered and cook for 15 minutes.
  3. Mean while cut cauliflower and cook in boiling water until soft.
  4. Drain the cauliflower and let cool down.
  5. Slice the veggies and set aside.
  6. To make the hoey-lime dressing, combine honey, lime juice, olive oil, black pepper and emulsify.
  7. When quinoa has absorbed all the water, remove and let it cool down.
  8. Assemble the quinoa and veggies and drizzle the honey-lime dressing on top and serve.
