Apple cucumber  is such delightful fruit that it truely represents the ‘old saying’ cool as a cucumber. Especially during the hot summer days, a cucumber can help you get your  body temperature down. I have absolutely loved every bite of this fruit. This apple sized,  creamy white colored fruit is some-what sweet, mild and  very soft in texture.

I have used lemon-pepper dressing to dress  this salad. The tangy and sharp flavor really helped to make this salad as enjoyable as possible. I hope you all will enjoy making this salad and be sure to drop me your feedback on the comment section below.

Quinoa & Apple Cucumber Salad  Recipe

Ingredients

  • Quinoa – 200 gms
  • Olive oil – 1 Tsp for cooking
  • Chicken stock – 2 cups
  • Apple cucumber – 200 gms, sliced
  • Carrots – 200 gms, sliced
  • Red onion -1/2 sliced
  • Lemon pepper-1/2 Tbsp
  • Olive oil -2 Tbsp, for making dressing
  • Salt to taste
  • Freshly ground black pepper to taste

Directions

  1. In a sauce pan, heat up olive oil.
  2. Add quinoa and cook for a minute.
  3. Pour in the chicken stock, let it come to a boil.
  4. Reduce the flame and let it cook on a slow simmer.
  5. When cooked, remove from the stove and let it cool down.
  6. While quinoa being cooled down, cut vegetables and make the dressing.
  7. To make  the dressing, take lemon-pepper, oil and seasoning in a bowl.
  8. Whisk well to combine all the ingredients.
  9. It is advisable to all components of the salad before mixing.
  10. Toss together cooked quinoa, vegetables and dressing and serve.
