Quick & Easy Chicken Curry is made with marinated chicken cubes slowly cooked in a rich tomato and onion based gravy. I have used homemade garam masala powder for this recipe, if you would like to learn to learn how to make perfect garam masala for your chicken curry, click here.

I have marinated the chicken before hand with gingergarlic paste, oil, turmeric powder, garama masa powder and chilly powder and let sit over night.

Ingredients

  • Chicken (boneless ) -750 gms, cubes
  • Coconut oil / Vegetable oil- 1 Tbsp
  • Cloves – 3
  • Cardamom -2
  • Whole black peppercorns -1/2 Tsp
  • Dried chilly -2
  • Fennel seeds -1/2 Tsp
  • Ginger paste -1 Tsp
  • Garlic paste -1 Tsp
  • Onion-2 medium, chopped
  • Green chilly -2 each, slit
  • Turmeric powder -1 Tsp
  • Chilly powder -1 Tsp
  • Garam masala powder -1 Tsp
  • Tomato – 2 medium, chopped
  • Salt to taste

Directions

  1. Cut chicken into cubes and marinate.
  2. Marinate the chicken with 1/2 Tsp each of ginger paste, garlic paste, turmeric powder, chilly powder and garam masala powder.
  3. Let the chicken sit in the marination over night (at least for 2 hours).
  4. Heat coconut oil/vegetable oil in a skillet.
  5. Fry off the whole spices such as cloves, cardamom, dried chilly, fennel seeds and whole black peppercorns.
  6. Then add the onion and saute for 2 minutes.
  7. Add green chilly, ginger paste and garlic paste.
  8. Cook until the raw flavor goes off.
  9. Then add turmeric powder, chilly powder and garam masala powder.
  10. Cook on a slow fire until the flavor becomes apparent.
  11. Add chopped tomato and salt.
  12. Cook until the tomatoes break down down and becomes a smooth paste (Add 1/2 cup of water if needed.)
  13. Add in marinated chicken and let it cook on a slow flame.
  14. When the chicken is soft and tender, adjust seasoning and remove from the fire.
  15. Dish out and enjoy.
