The health benefits are many and quail has been in use in the field of medicine since ages. Kerala Style Quail Egg Biriyani (Kada Mutta Biriyani) is made from combining delicious quail egg roast with basmati rice, vegetables and spices.

Quail eggs are good for both young and aged. Especially for young children, if you can include quail eggs at least twice in a week would really help. Quail eggs are rich in potassium, sodium, zinc, riboflavin, Vitamin A, Vitamin E, Vitamin B6, Vitamin B12,etc. Helps prevent allergic reactions, slows down aging, good for skin, improves metabolism, stimulate growth and proven to be good for diabetic patients as well.

How do you eat quail eggs? You can cook quail eggs however you want it. Fried, poached or scrambled, etc. I like eggs and particularly dry egg roast made in typical Kerala style. Kerala Style Quail Egg Biriyani recipe is very easy to make and steps in making it is  not complicated. I have made egg roast and rice with vegetables separately and then layered together and dum cooked for a while.

Kerala Style Quail Egg Biriyani Recipe

Ingredients

  • Quail eggs – 12 each
  • Oil – 1 Tbsp
  • Onion– 2 medium, sliced
  • Ginger – 1 Tsp, chopped
  • Garlic– 4 cloves, chopped
  • Green chilly -2 each, slit
  • Turmeric powder – 1 Tsp
  • Coriander powder – 1/2 Tsp
  • Chilly powder – 1 Tsp
  • Garam masala – 1 TSp
  • Basmatic rice – 300 gms
  • Butter or ghee – 1 Tsp
  • Cardamom-3 each
  • Star anise -2 each
  • Cinnamon stick- 1
  • Carrots- 1 , chopped
  • Green beans – 1/2 chopped
  • Green peas -1/2 chopped
  • Water – 600 ml
  • Coriander leaves- 1 Tbsp, chopped
  • Salt to taste

Directions

  1. At first you need to make the quail egg and let it sit for some time and infuse the flavors into the egg.
  2. To make the quail egg roast, hard boil eggs, peel and set aside.
  3. In a skillet, heat oil and saute onion first.
  4. Add ginger, garlic and green chilly, salt and cook until onions turn golden brown in color.
  5. Sprinkle powdered spices and cook well.
  6. Add the hard boiled eggs and cook for another 5 minutes.
  7. Remove from the fire and set aside.
  8. To make the rice, heat up ghee or butter in a pot.
  9. Add whole spices, such as star anise, cinnamon and cardamom.
  10. Add vegetables and cook for 2 minutes.
  11. Add rice, saute until crispy.
  12. Add water (see note below) , salt and bring it to a boil.
  13. Reduce the flame and let it cook on a simmering fire until the rice is cooked.
  14. Now you need to layer the rice and egg roast.
  15. To do that, first spread rice in a pot , spread the quail egg roast over it and sprinkle chopped coriander.
  16. Repeat one more layer and dum cook for 10 minutes.
  17. Now your quail egg biriyani is ready.

Note: Rice should be washed and drained before cooking. Water should boiling hot while adding it to the rice.
