Potato & Quinoa Curry is a super easy and very simple curry made with potato, quinoa and Indian spices. No complex spices, no elaborate cooking process involved, pretty straight forward recipe made with a handful of ingredients.

Potato & Quinoa Curry

Let me explain how easy this recipe is, all you chop is a chop is a couple of potatoes and roughly chop an onion to make a purée of it. Then cook onion with turmeric and chilly powder, then diced potatoes are added. At a later stage Quinoa is added and cooked together.

I love my curries with chopped onions or tomatoes on top. Well, for this dish I added some tomatoes and it has really complemented the taste profile of this dish. I hope you all will like this recipe , drop me your feedback in the comment section below..

Potato & Quinoa Curry Recipe

Ingredients

  • Potato – 2, diced
  • Quinoa -200 gms
  • Coconut oil – 1 Tbsp
  • Onion – 2, puréed
  • Turmeric powder -1 Tsp
  • Chilly powder – 1/2 Tsp
  • Tomato– 1, chopped
  • Salt to taste

Directions

  1. Dice potatoes, set aside.
  2. Roughly chop onion and purée it.
  3. Heat up coconut oil, on a slow fire stir in powdered spices such as turmeric and chilly powder.
  4. When the flavour is apparent, add in onion purée and cook on a slow fire 3-4 minutes.
  5. Then add in diced potatoes, season and cook for 5 minute.
  6. Add in quinoa and let it come to boil.
  7. Reduce fire to simmer and cook for another 18-20 minutes.
  8. When done, remove from fire and smash the potatoes a little bit, this helps give a body to the curry.
  9. Dish out and garnish with some chopped tomatoes and Enjoy.
