Potato and Fine Beans Curry

This comforting potato and beans curry  is one of the best dishes for any vegetarians and vegans, and this is absolutely hearty as well. This is one of the most basic Indian potato and beans curry recipes where I have used coriander and cumin as the major and dominating ingredients…

Potato and green beans curry goes very well with the rice or chapathi can also be substituted with the rice.




  • Potato – 5oo gms
  • Green beans- 250 gms
  • Oil- 2 Tbsp
  • Ajwain – 1/2 Tbsp
  • Coriander seeds – 1/2 Tbsp, crushed
  • Onion – 2 medium, sliced
  • Turmeric powder – 1 Tbsp
  • Chilly powder – 1 Tbsp
  • Coriander powder – 1 Tbsp
  • Cumin powder – 1/2 Tbsp
  • Tomato – 1 medium , chopped
  • Kasoori methi – 1 Tbsp
  • Coriander leaves- 1 Tbsp, chopped
  • Salt to taste


  1. Peel potatoes and cut into batons.
  2. Cut green beans into half, chop tomatoes and set aside.
  3. Heat oil in pan, add crushed coriander seeds and ajwain.
  4. Let the flavor to infuse, add sliced onion.
  5. Add turmeric powder, chilli, coriander and cumin powder in the beginning itself.
  6. Let the onion and spices cook together for a good five minutes on low flame.
  7. Add cut potatoes and saute for a minute.
  8. Add enough water to cover the potatoes and let cook on a simmering flame.
  9. Once the potatoes are almost cooked, add green beans and continue to cook.
  10. When the potatoes are cooked well, add chopped tomatoes and coriander leaves.
  11. Adjust the seasoning and serve hot.
