Aloo Gobi Masala (Potato and Cauliflower Masala)

I know, you must have seen  different varieties of aloo gobi. The restaurant style, the homely style, the dhaba style etc…

This recipe gives you an almost dry aloo gobi dish with a tiny bit of gravy in it, this is how I want my aloo gobi to be, the gravy should be  just good enough to coat..(you can tweak the texture as per your need). Aloo gobi masala goes very well with chapathi or you can have it even with the rice as well..

Ingredients

  • Potatoes -200 gms, peeled and cubed
  • Cauliflower – 200 gms
  • Vegetable oil – 1 Tbsp
  • Star anise – 2 pcs
  • Bay leaves – 2 pcs
  • Cinnamon stick – 1 pc
  • Cumin seeds – 1 Tsp
  • Garlic – 1 teaspoon, minced
  • Ginger paste – 1 Tsp, chopped
  • Onion – 1 medium, sliced
  • Ground turmeric – 1/2 Tsp
  • Chilly powder- 1/2 Tsp
  • Ground cumin – 1 Tsp
  • Coriander powder -1/4 Tbsp
  • Garam masala – 1/2 Tsp
  • Salt – to taste
  • Coriander leaves – 1 Tbsp, chopped

Directions

  1. Heat the oil in a mediu msized skillet over medium heat.
  2. Add the whole spices such as bay leaves, cinnamon stick and star anise, cook for a minute.
  3. Stir in the cumin seeds, garlic, and ginger paste. Cook about 1 minute until garlic is lightly browned.
  4. Add the onions and stir fry until translucent.
  5. Add turmeric, chilly , coriander, cumin, garam masala, and salt.
  6. Add the potatoes, stir fry for a minute and add water.
  7. Cover and continue cooking 5 to 7 minutes stirring occasionally.
  8. Mix the cauliflower and cilantro into the saucepan. Reduce heat to low and cover.
  9. Stirring occasionally, continue cooking 10 minutes, or until potatoes and cauliflower are tender.
  10. Adjust the seasoning and serve hot.
