This Classic Potato,Cauliflower & Green Peas Curry is made from slow cooking potato, cauliflower and green peas in a spicy Indian spiced gravy and finished with butter and coriander leaves.

I was just in mood to a gobble a spicy curry today considering the fact that weather outside is pretty cold¬† and it’s getting colder day by day. No sign of going up at all.. This classic dish goes very wellwith rice and I have even tried it chapathi, I liked the rice-curry combination.

A very balanced dish from healthy perspective and super easy to make it at home. Besides that, you can include this in your lunch box dish list to have enough variety to try from.

Classic Potato,Cauliflower & Green Peas Curry recipe with step wise photos..

Ingredients

  • Potato –¬† 400 gms
  • Cauliflower – 200 gms
  • green peas – 150 gms
  • Onion – 1, medium, sliced
  • Vegetable oil – 1 Tbsp
  • Black pepper – 1/2 Tsp
  • Coriander seeds – 1/2 Tsp
  • Cumin seeds – 1/2 Tsp
  • Gingergarlic paste – 1 Tsp
  • Green chilly – 1,chopped
  • Turmeric powder – 1/2 Tsp
  • Chilly powder – 1/2 Tsp
  • Cumin powder – 1/4 Tsp
  • Coriander powder =- 1/4 Tsp
  • Garam Masala -1/2 Tsp
  • Water – 1 cup
  • Salt to taste
  • Butter – 1Tbsp
  • Coriander leaves -1Tbsp, chopped

Directions

  1. Peel the potatoes, dice them.
  2. Slice onions, cut cauliflower and set the cut vegetables aside.
  3. In a skillet, heat up vegetable oil.
  4. Add the whole spices and let it infuse the flavor for a minute.
  5. Slide in sliced onion and potatoes together.
  6. Stir in gingergarlic paste and green chilly.
  7. Slow down the fire to low and add the powdered spices.
  8. Make sure to cook the spices well.
  9. Pour one cup of hot water and season with salt.
  10. Let it simmer for 10 minutes.
  11. Mix in cut cauliflower and green peas and continue to cook.
  12. When the potatoes are soft, add butter and chopped coriander leaves.
  13. Adjust the seasoning and serve hot.

Note: After adding butter, you just need to let it sit for 2-3 minutes before serving to get the best results.

 

Heat oil and add whole spices..

Sprinkle powdered spices..

Cook the potatoes and powdered spices on a slow fire..

Add one cup of hot water and let it simmer..

Mix in cauliflower and green peas..

Cook on a slow fire until the potatoes are soft..

One spoon full of butter and chopped coriander leaves are added…
