Pork & Potato Masala

This recipe is purely my own version of Pork & Potato Masala, a typical Kerala style pork delicacy which is known for it’s intense flavours and superb mix of spices.

I have tried this recipe multiple times in my kitchen and this is one of my favourite pork dishes from Kerala. You may also check out previously posted Pork & Potato Curry  recipe.

First of all you need to dry roast the whole spices such as fennel seed, coriander seed, black peppercorns, cloves, cardamom, cinnamon, dry chillies in a sauce pan at a moderate heat. Then grind the whole roasted spices with turmeric powder and red chilly powder to a fine powder in a food processor.

Then marinate the pork cubes with the powdered spices, sliced onion, curry leaves, green chilly,gingergarlic paste, coconut 🥥 oil and salt. Let the marinated pork sit for an hour before cooking.

Pork & Potato Masala Recipe

Ingredients

  • Pork belly – 1 kg
  • Cinnamon -1
  • Cloves – 3 each
  •  Cardamom – 3 each
  • Fennel seeds -1/2 Tsp
  • Coriander seeds -1/4 Tsp
  • Black pepper corns
  • Dried red chilly -2 each
  • Turmeric powder -1 Tsp
  • Chilly powder -1 Tsp
  • Gingergarlic paste -1 Tsp
  • Onion -1 sliced
  • Green chilly -2 slit
  • Curry leaves –  2 sprigs
  • Coconut oil -2 Tsp
  • Salt to taste
  • Potato -2 diced
  • Freshly ground black peppercorns

Directions

  1. Cut pork belly into dices ( keep the belly fat as it enhances flavour)
  2. Heat up a skillet, add the whole spices  and dry roast them on slow heat until the flavour becomes apparent.
  3. Then grind dry roasted whole spices with turmeric and chilly powder to a smooth powder.
  4. Now marinate the pork cubes with the powdered spices, gingergarlic paste, sliced onion, curry leaves, coconut oil, salt and green chilly.
  5. Let the marinated pork sit for an hour and let the flavours intensity.
  6. Transfer the marinated pork into a thick bottomed cooking vessel and stir fry on medium heat.
  7. Reduce the fire to slow and cover with a lid.
  8. When the pork is half done, add diced potato and continue to cook stirring occasionally.
  9. Once the pork and potatoes are tender, a Check and adjust the seasoning.
  10. Serve with rice or chapathi. Enjoy.
