One of the facts which has made me a huge fan of stews is that even though they look big they feel very light in stomach. Peas Potatoes Quinoa Stew is not different from any other stews and quinoa is so versatile. A beautiful stew made with green peas, potatoes, quinoa, Indian spices and spinach.

Unlike the other stews, Peas Potatoes Quinoa Stew is somewhat thick in consistency and I wanted to cook it a little longer and let the starch in the potato to release as much as starch as possible. This helped this stew gain it’s thick consistency.

Peas Potatoes Quinoa Stew Recipe

Ingredients

  • Quinoa -250 gms
  • Potato – 300 gms, diced
  • Green peas -1 cup, frozen
  • Coconut oil – 1 Tsp
  • Onion -1 chopped
  • Garlic -1/2 Tsp, chopped
  • Ginger -1/2 Tsp, chopped
  • Turmeric -1 Tsp
  • Chilly powder -3/4 Tsp
  • Spinach -1 cup, shredded
  • Salt to taste

Directions

  1. Heat up coconut oil, sauté onion until soft.
  2. Add ginger and garlic cook for another minute.
  3. Sprinkle powdered spices and let it cook on a slow fire.
  4. Add potatoes, peas, quinoa, salt and water.
  5. Once boiling, reduce fire and let it simmer.
  6. Cover with a lid and cook until soft.
