Paneer Korma

Well, this korma is unique in it’s own way, I have used equal quantities of onion, cashew nuts,  almonds and a tiny bit of cream to finish to make it mild yet flavorful. I have tried to copy as close as my mother makes it. I have made her taste it and she was happy with the taste and flavor profile.

Ingredients

  • Paneer- 250 gms
  • Cooking oil- 1 Tbsp
  • Butter- 50 gms
  • Cinnamon- 1 stick
  • Cardamom – 3 nos
  • Cloves – 2 nos
  • Bay leaves- 1 no
  • Pepper corns – 1/4 Tsp
  • Onion– 100 gms
  • Ginger – 1/2 Tsp
  • Green chilly – 1 each
  • Cashew nuts- 75 gms
  • Almonds- 50 gms
  • Chilly powder- 1/2 Tsp
  • garam masala- 1 Tsp
  • Coriander powder- 1/2 Tsp
  • Hot water – 1/2 cup
  • Fresh cream- 50 ml
  • Salt to taste
  • Kasoori methi – 1 Tsp

Directions

  1. Cut paneer into medium sized cubes and keep it aside.
  2. In a medium sized sauce pan heat oil and butter together, add whole spices such as bay leaf, cinnamon, cardamom, cloves and pepper corn and cook for 2 minute on  low flame, let the flavors infuse and remove.
  3. Add onion and cook until it becomes soft, add chop. ginger and green chilly and cook.
  4. Add cashew nuts and almonds, cook for a minute.
  5. Add powdered spices such as chilly powder and garam masala and cook on slow fire for about 3 minutes.
  6. Add 1/2 cup of hot water, let it come to boil and simmer for 5 minutes.
  7. Remove from fire and let it cool down. Blend the mixture to a fine smooth paste.
  8. Return the mixture to sauce pan, add paneer and continue to cook for about 5 minutes on a slow fire.
  9. Add cream, check seasoning. Finish with kasoori methi and serve.
