I just realised that it’s been some time since I have posted any chicken quinoa and chicken combo, One Pot Spiced Chicken & Quinoa Recipe is my personal favorite and I had the photos taken and saved in the folder and almost forgotten it.

One Pot Spiced Chicken & Quinoa Recipe

A very easy to make dish made with chicken tenders marinated in Indian spices and cooked together with quinoa. They key factor this recipe is marinate the chicken and let it rest for an hour. A perfect lunch dish ideally for a weekend unwinding.

One Pot Spiced Chicken & Quinoa Recipe

I have made it a couple of months ago and I have been wanting to make a similar dish with chicken and a lot of seasonal veggies. I will post the vegetables and chicken version of the same soon.

One Pot Spiced Chicken & Quinoa Recipe

Ingredients

  • Quinoa – 300 gms
  • Chicken 600 gms
  • Extra virgin olive oil – 1 Tbsp
  • Onion – 1 sliced
  • Turmeric powder -1/2 Tsp
  • Chilly powder -1/2 Tsp
  • Garam masala -1 Tsp
  • Curry leaves – 1 sprig
  • Green cardamom -2
  • Whole black pepper corns -1/2 Tsp
  • Green chilly -1 slit
  • Gingergarlic paste – 1/2 Tsp
  • Sat to taste
  • Coriander leaves chopped
  • Water -500 ml

Directions

  1. Marinate the chicken with powdered spices, wholes spices, curry leaves, onion, oil, gingergarlic paste, green chilly and seasoning.
  2. Wash and soak quinoa for 15 minutes.
  3. Drain and set aside to dry.
  4. Let the marinated chicken rest in the refrigerator for an hour.
  5. Heat up thick bottomed cooking vessel and transfer the marinated chicken into the hot vessel.
  6. Cook on a moderate heat until the spices are cooked and flavour becomes apparent.
  7. Now add quinoa and stir fry for 2 minutes.
  8. Add water, salt and let it come to a boil.
  9. Reduce the flame to simmer, cover with a lid and cook until soft.
  10. This should take about 18-20 minutes.
  11. Check and adjust the seasoning and finish with chopped coriander leaves.
  12. Dish out and serve hot. Enjoy.
