One Pot Chicken With Quinoa is one my personal favourite for many reasons. It’s is easy to cook, rich in flavour, healthy, tasty 😋 and more importantly less mess..Yes, minimal clean-up, especially when you have cook your dinner in now time and not in a mood to clean-up.

A very simple and easy to make recipe with a handful of ingredients – chicken, yougurt, turmeric, chilly powder, salt, black peppercorns and quinoa.

What Is One Pot Meal?

The whole idea behind one pot meal is to cook all the elements of a meal in one pot, such as protein, starch and vegetables. When you do one pot meal, you literally save time, maximise flavours, room for diversity, do not have to religious with a recipe and minimal clean-up.

One Pot Chicken With Quinoa Recipe with step by step photos.


  • Chicken breast – 400 gms, diced
  • Yoghurt -2 Tbsp
  • Turmeric -1/2 Tsp
  • Chilly powder -1/2 Tsp
  • Salt to taste
  • Freshly ground black pepper corns
  • Extra virgin olive oil -1 Tbsp
  • Quinoa -300 gms
  • Water -600 ml


  1. Marinate the chicken with yoghurt, chilly powder, turmeric powder, salt and freshly ground black pepper corns.
  2. Let the marinated chicken sit for an hour.
  3. Wash and drain the quinoa, set aside.
  4. Heat the oil in a medium sized thick bottomed vessel.
  5. Fry the chicken over a medium heat until golden brown.
  6. Now add quinoa, stir fry for 2 minutes.
  7. Add water, seasoning and let it come to boil.
  8. Reduce to simmer, cover with a lid and cook until both chicken and quinoa are cooked.
  9. Stir occasionally to prevent sticking to the bottom and sides.
  10. When done, remove from the fire and serve hot.
