One Pan Indian Quinoa

One Pan Indian Quinoa is a super easy and super healthy vegan  quinoa recipe made with quinoa, mixed vegetables, Indian powdered and whole spices. I have personally liked it eating it with avocado, you should try out this combination and see if you like it.

One Pan Indian Quinoa

Beware of the hotness of the green chilly, I have used a generous amount for this recipe but adding avocados before eating helped mellow down the hotness. If you handle chillies, either you  cut down on the amount or do not add it at all.

  • Quinoa – 200 gms
  • Extra virgin oil – 1 Tbsp
  • Green cardamom – 1/2 Tsp
  • Black pepper corns – 1/2 Tsp
  • Cumin seeds – 1/4 Tsp
  • Onion – 1 chopped
  • Ginger-1/2 Tsp, chopped
  • Garlic -1/2, chopped
  • Green chilly -4 each, chopped
  • Carrot -1 small dices
  • Green peas -1/2 cup
  • Cut corns-1/2 cup
  • Turmeric powder -1/2 Tsp
  • Garam masala -1/2 Tsp
  • Chilly powder -1/4 Tsp
  • Salt to taste
  • Avocado- 2 diced


  1. In a medium sized pan, heat olive oil and add onion.
  2. Saute for a minute, add in ginger and garlic.
  3. Add cardamom, cumin and black pepper corns and cook on a medium fire.
  4. When onions are translucent, add powdered spices and cook for 2 minutes on a slow fire.
  5. Now you can stir in the vegetables and add 2 cups water and salt.
  6. Let it come a boil, then reduce to simmer and add quinoa.
  7. Cover with a lid and cook until soft.
  8. Check the seasoning and adjust if needed.
  9. Dish out and top it with diced avocados.
