A personally don’t like rice for dinner, but I am always wanted to try out a less spicy 🌶 version of a namkeen chawal for my dinner some day. There I was last weekend trying out this fabulous recipe and fell in love with it😍.

So, What is Namkeen  Chawal?

Namkeen Chawal is a very flavourful and unique version Punjabi style vegetable pulao or vegetable biryani. Rice and vegetables are cooked in an flavourful and aromatic spice combination which will feel very light at your stomach.

Namkeen Chawal / Vegtable Pulao Recipe

Ingredients

  • Basmati rice – 1 cup
  • Vegetable oil-1 Tbsp
  • Cardamom -3
  • Cloves -3
  • Bay leaves -1
  • Whole black peppercorns -1/2 Tsp
  • Cumin seeds -1/2 Tsp
  • White onion -1 sliced
  • Turmeric -1/2 Tsp
  • Chilly powder -1/4 Tsp
  • Garam masala -1/2 Tsp
  • Garlic -2 cloves, crushed
  • Potato – 3diced
  • Green Peas -1 cup frozen
  • Coriander leaves -2 Tbsp, chopped
  • Ghee or clarified butter -1 Tbsp
  • Water -2 cups

Directions

  1. Wash the basmati rice under cold running water to remove the impurities.
  2. Soak the rice for 15 minutes and drain.
  3. In the mean time, get vegetables prepped and set aside.
  4. In thick bottomed cooking vessel, heat up oil.
  5. Add whole spices such as cloves, cardamom, bay leaves, cumin and black peppercorns.
  6. Cook for 2 minutes, then add sliced onion, garlic and salt.
  7. Then add the powdered spices and cook 👩‍🍳 on a slow flame 🔥 until the flavour becomes apparent.
  8. Now add the rice and stir fry until crispy.
  9. Add water ( preferably hot water 💦) and bring to a boil.
  10. Add in diced potatoes 🥔 and green peas.
  11. Reduce the flame to simmer, cover with a lid.
  12. Let it cook on simmer until soft and fragrant.
  13. Sprinkle coriander leaves and ghee and gently mix in.
  14. Serve hot and enjoy with yogurt and pickle.
