Today I have made a quick and easy chicken curry with boneless chicken, let’s take a look at how this delicious Nadan Boneless Kozhi Curry/ Quick & Easy Chicken Curry is made.

Talking about the spice mix, I have kept it very simple and I have used only dry spices such as turmeric powder, coriander powder, chilly powder and cumin powder. I have finished the curry with curry leaves and chopped tomatoes.

1.Heat up oil and fry cumin seeds, curry leaves and fennel seeds

2. Add onion and cook until soft..

3.Add ginger and garlic paste and cook until nice golden brown in color..

5.Add powdered spices and 2 tablespoon water and cook until the raw flavor goes off..

6. Add chicken and cook on medium slow fire..

7.When the chicken is almost done , add chopped tomatoes and until the chicken is soft and tender..

8. Finish with curry leaves and adjust the seasoning..

Ingredients

  • Boneless chicken -750 gms
  • Vegetable oil -1 Tbsp
  • Onion – 2 medium, chopped
  • Curry leaves – 2 sprigs
  • Fennel seeds -1/2 Tsp
  • Cumin seeds-1/2 Tsp
  • Garlic paste -1 Tsp
  • Ginger paste -1 Tsp
  • Crushed chilly or chilly flakes – 1Tsp
  • Turmeric powder – 1Tsp
  • Chilly powder -1 Tsp
  • Coriander powder -1 Tsp
  • Cumin powder – 1 Tsp
  • Salt to taste
  • Tomato – 2 chopped

Directions

  1. Cut the chicken breast (boneless) into small dices.
  2. Marinate with oil, 1/2 Tsp each  turmeric powder, chilly powder, coriander powder , ginger paste and garlic paste.
  3. Let the chicken sit in the marinade overnight.
  4. To begin cooking, heat oil in a skillet.
  5. Add cumin seeds first and let it fry for minute on slow fire.
  6. Then add curry leaves and fennel seeds, cook for a minute.
  7. Now add chopped onions and sprinkle salt.
  8. Let it cook on medium fire until golden brown in colour.
  9. Sprinkle one teaspoon of crushed chilly and cook for minute.
  10. Add powdered spices such as turmeric, chilly and coriander now and cook until the raw flavor goes off.
  11. Add 1 or 2 Tbsp of water if needed so that spices don’t burn.
  12. Now add the marinated chicken and mix well.
  13. Add 1/2 a cup of water and cook on a slow fire (let it slow simmer).
  14. When chicken is almost done, add in chopped and cook until the chicken is soft and tender.
  15. Adjust the seasoning and finish with curry leaves.

Note:Nadan Boneless Kozhi Curry/ Quick & Easy Chicken Curry goes very well with boiled rice or chapathi.
