Moroccan Quinoa & Vegetable Stew

Moroccan Quinoa & Vegetable Stew

Ingredients

  • Quinoa – 200 gms
  • Potatoes – 200 gms, diced
  • Cut corns -100 gms, frozen
  • Carrots – 2 diced
  • Capsicum red- 1 diced
  • Tomatoes – 2 chopped
  • Capsicum green -1 diced

Green -1/2 cup, chopped

  • Green peas – 1/2 cup frozen
  • Extra virgin olive oil – 1Tbsp
  • Onion – 1 chopped
  • Garlic – 1 Tbsp, chopped
  • Paprika – 1/2 Tsp
  • Moroccan spice- 1 Tsp
  • Cumin powder – 1/4 Tsp
  • Vegetable broth as needed
  • Salt to taste
  • Freshly ground black pepper
  • Line juice
  • Coriander leaves

Directions

  1. Was quinoa, drain and set aside.
  2. Heat olive oil in a thick bottomed vessel.
  3. Saute onion and garlic for a minute
  4. Add In paprika, cumin, Moroccan spices and cook on slow fire until fragrant.
  5. Stir in potatoes, capsicums, corns,quinoa and add broth.
  6. Season with salt and bring to boil.
  7. Reduce fire and cook covered with a lid.
  8. After 10 minutes, add in green peas, tomatoes.
  9. Cook for another 7-8 more minutes or until the quinoa and potatoes are cooked.
  10. To finish the stew, add lemon juice, coriander leaves and freshly ground black pepper.
  11. Dish out to serving bowl and enology.

Note: Add vegetable broth as needed, if you don’t have vegetable broth use water instead.
