Moroccan Quinoa & Vegetable Stew
Ingredients
- Quinoa – 200 gms
- Potatoes – 200 gms, diced
- Cut corns -100 gms, frozen
- Carrots – 2 diced
- Capsicum red- 1 diced
- Tomatoes – 2 chopped
- Capsicum green -1 diced
Green -1/2 cup, chopped
Directions
- Was quinoa, drain and set aside.
- Heat olive oil in a thick bottomed vessel.
- Saute onion and garlic for a minute
- Add In paprika, cumin, Moroccan spices and cook on slow fire until fragrant.
- Stir in potatoes, capsicums, corns,quinoa and add broth.
- Season with salt and bring to boil.
- Reduce fire and cook covered with a lid.
- After 10 minutes, add in green peas, tomatoes.
- Cook for another 7-8 more minutes or until the quinoa and potatoes are cooked.
- To finish the stew, add lemon juice, coriander leaves and freshly ground black pepper.
- Dish out to serving bowl and enology.
Note: Add vegetable broth as needed, if you don’t have vegetable broth use water instead.
