Mixed Beans and Vegetable Salad

Kidney beans, chick peas, cut corns, tomatoes, onions and broccoli is mixed together with greens and carefully tossed in a tangy chaat masala vinaigrette.

Mixed beans and vegetable salad is one of those salads you will enjoy irrespective of the season. A perfect salad for picnics and a very healthy option when you traveling around.

In the vinaigrette recipe I have added a bit sugar, if you want you can cut back the sugar, but I did not cut it out, or the dressing will turn acidic.

Ingredients

  • Kidney beans- 100 gms
  • Chick peas – 100 gms
  • Cut corn – 50gms
  • Broccoli- 100 gms
  • Onion – 1 medium, diced
  • Tomato – 1 medium, diced
  • Ice berg lettuce – 50 gms
  • Green leaf lettuce- 50 gms
  • Salad oil – 3 Tbsp
  • Chaat masala – 1 Tsp
  • Freshly ground black pepper
  • Vinegar – 1/2 Tsp
  • Salt to taste
  • Sugar – 1/2 Tsp
  • Mint leaves – 1 Tbs, chopped
  • Coriander leaves – 1 Tbsp, chopped
  • Lemon wedge/ lemon juice as needed

Directions

  1. Wash and soak the beans separately for 2 hours .
  2. Cook the until they are just crunchy and done, don’t over cook.
  3. Cut  vegetables such as onion, tomato, broccoli and set aside.
  4. In a small bowl, whisk together oil, vinegar, chaat masala, sugar, salt and black pepper.
  5. In big mixing bowl, mix together cut vegetables, cooked beans, chaat vinaigrette dressing and chopped mint and coariander leaves.
  6. Chill beans in a refrigerator for an hour to allow the beans and vegetables to soak up the flavor of the dressing.
  7. Serve cold.
