Well, in the recent years Quinoa has become so popular in the culinary world and it’s seems like every grocery store and super markets have quinoa on their shelves. I have hesitated eating this super grain quinoa until I have learned the health benefits and it’s versatility. I thinks, that’s the best thing about, it just takes the flavour from whatever you cook together with. I have been experimenting a lot quinoa combinations and I am planning to try all most all  the combinations I could ever try.

Lentils and quinoa are cooked together with vegetables, leafy greens and spices. I have soaked both the lentil and the quinoa prior to cooking, this has really helped reducing the cooking time and the body of the stew.

Lentil Vegetables Quinoa Stew

Ingredients

  • Tovar dal or pigeon pea – 200 gms
  • Quinoa -200 gms
  • Extra virgin olive oil – 1 Tbsp
  • Onion-1 medium, chopped
  • Garlic -1 Tsp, chopped
  • Garlic -1 Tsp, chopped
  • Celery -1 stalks, diced
  • Carrot – 2 diced
  • Cauliflower -1/4 cup, florets
  • Tomatoes -2 diced
  • Spinach – 1 cup
  • Turmeric -1 Tsp
  • Water -400 ml
  • Salt to taste
  • Freshly ground black pepper

Directions

  1. Wash and soak the lentil (pigeon pea) for 15 minutes, drain and set aside.
  2. Heat up extra virgin olive oil in thick bottomed vessel and add onion.
  3. Saute for minute, add in garlic and ginger and continue for another minute, just until fragrant.
  4. Add lentil, quinoa, vegetables, salt and mix well.
  5. Pour water and bring the soup to boil.
  6. Once boiling, reduce the fire to simmer, cover with a lid and cook for 18-20 minutes.
  7. Check if the vegetables and lentils are tender and adjust seasoning.
  8. Now add in spinach and cook for another 2 minutes.
  9. Dish out and serve hot. Enjoy.
