Kumbalanga or Ash gourd or White gourd or Winter melon thoran is distinctively delicious and is not as common as many other side  dishes such as aviyal or sambar. This easy and simple recipe is going explain how to make Kumbalanga/Ash Gourd Thoran with easy to follow directions.

The recipe is very simple and so easy to make..

Kumbalanga/Ash Gourd Thoran Recipe..


  • Kumbalanga -700 gms
  • Oil  – 2 Tbsp
  • Mustard seeds – 1 Tsp
  • Curry Leaves- 1 Tbsp
  • Dry chilli – 4 pcs
  • Shallots- 75 gms
  • Coconut grated- 200 gms
  • Garlic – 4 cloves
  • Cumin whole -1 Tbsp
  • Dry chilly – 3 pcs
  • Chilly powder (optional) – 1 Tsp
  • Salt to taste


  1. Remove the skin of the ash gourd, dice and keep aside.
  2. First to start with the tempering.
  3. Heat oil in a pan, when it comes to a smoking point, add mustard seeds, dry chilli, curry leaves and shallots and cook for about 2 minutes on a medium fire.
  4. Add diced ash gourd, add salt and cook until they are soft.
  5. Drain off excess water,
  6. While you cook the ash gourd, you can make the coconut-masala paste and keep aside.
  7. Add grated coconut, cumin seeds, garlic, whole chilly and chilly powder to food processor and crush (make sure to not to blend it fine).
  8. Add this mix to the cooked ash gourd and cook by gently mixing on a slow fire for about 4-5 minutes.
  9. Check  the seasoning and serve hot.
