Kumbalanga is the Malayalam word for ash gourd and is also called as winter melon.  Many dishes are made with kumbalanga in Kerala such as curries, desserts and drinks.

Kumbalanga Juice / Ash gourd Juice is very easy to make. All you need is kumbalanga/ash gourd, water, lemon juice and salt. Take all the ingredients in a jar blender, blend it together and it’s ready.

Kumbalanga Juice / Ash gourd Juice recipe..

Ingredients

  • Kumbalanga – 500 gms
  • Water – 100  ml, enough for blending
  • Lemon juice – 1 Tsp
  • Salt to taste

Directions

  1. Peel the skin and remove the seeds.
  2. Cut them into cubes.
  3. In a food processor, take the kumbalanga, add tiny bit of water (water should be just enough for blending).
  4. Add salt, lemon  juice and blend well.
  5. Strain to remove any chunks or bits.
  6. Serve cold.

Note: You can add mint leaves for garnishing or leave a couple leaves in the juice for 5 minutes and remove it before drinking.
